Type of tea: Yellow Tea
Brewing method: 6oz in gaiwan, boiling water
This is a unique, lightly oxidized tea. Not quite green tea but also not as aged or processed as other types of tea. It starts out with a really light green colored steep and goes deeper green. The fresh grassiness associated with green tea is still there but it also has a bit more sweetness and (I swear) almost a sort of nutmeggy spiciness to it. Really nice, and makes me wonder why this style of tea isn't more popular...
