2016 Southpaw Shoumei

Brewing method: 6oz in gaiwan, boiling water

I love white teas because they have such a clean, natural taste that's really refreshing even when it's maaayyybe a bit too hot out to be running the kettle. This one is interesting in that it's been aged for a while. It ends up still having that nice lightness, but with some kind of earthy and creamy elements... Kind of like a really nice smelling old book, in a nice way! And a very tasty sweetness that develops on later steeps.
